Just a quick reminder to both myself in the future and anyone else who may be reading this and undertaking system administration.
Don't forget to double check your log file locations. I had one Windows 2003 Server that was running IIS with the default location for the log files. Not a huge issue unless you are running short on disk space or havent cleared them out in a few years. I reclaimed close to 35GB!
Lesson Learned; Don't just assume that someone else has done it.
For Future Me:
Open IIS Admin,
right click the sites > Properties
change the Logging Properties as appropriate.
Either do each site individually or pick the websites node and roll down the changes when prompted.
